• 1 teaspoon turmeric
• 1 teaspoon cumin
• Salt and pepper, to taste

HOW TO MAKE IT
1) In a large skillet, heat some oil over medium heat. Add the diced onion and bell pepper and sauté until softened, about 5 minutes.
2) Add the crumbled tofu to the skillet and cook for an additional 3-4 minutes until it starts to brown slightly.
3) Stir in the cooked quinoa, black beans, turmeric, cumin, salt, and pepper. Mix well to combine and cook for another 2 minutes to allow the flavors to meld together.
4) Add the spinach leaves to the skillet and cook until wilted.
5) Warm the tortillas in a separate skillet or microwave
