INGREDIENTS

• 3 ripe bananas
• 1/2 cup vegan butter or coconut oil, melted
• 1 cup granulated sugar

• 1 teaspoon vanilla extract
• 1 1/2 cups all-purpose flour
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1/2 cup vegan yogurt or applesauce
• 1/2 cup chopped walnuts or pecans (optional)

HOW TO MAKE IT

1. Preheat your oven to 350°F (175°C). Grease a 9x5-inch loaf pan or line it with parchment paper.

2. In a small bowl, mix the ground flaxseed with water and set it aside to thicken, creating a flaxseed egg substitute.

3. In a large mixing bowl, mash the ripe bananas with a fork or potato masher until smooth.

4. Add the melted vegan butter or coconut oil, sugar, flaxseed egg substitute, and vanilla extract to the bananas. Stir until well combined.

5. In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry mixture to the banana mixture, stirring until just combined. Be careful not to overmix.
