INGREDIENTS

• 1 tablespoon olive oil
• 1 onion, diced
• 2 cloves garlic, minced
• 2 medium potatoes, diced
• 1 red bell pepper, diced
• 1 green bell pepper, diced
• 1 cup sliced mushrooms
• 1 cup firm tofu, crumbled
• 1 teaspoon paprika
• 1/2 teaspoon turmeric
• Salt and pepper, to taste
• Handful of fresh spinach leaves
• Fresh parsley, chopped (for garnish)

HOW TO MAKE IT

1) Heat olive oil in a large skillet over medium heat.

2) Add the diced onion and minced garlic. Sauté for 2-3 minutes until the onion becomes translucent.

3) Add the diced potatoes to the skillet and cook for about 10 minutes, stirring occasionally, until they start to brown and become tender.

4) Add the diced bell peppers and sliced mushrooms to the skillet. Cook for another 5 minutes until the vegetables are softened.

5) Crumble the tofu into the skillet and sprinkle with paprika, turmeric, salt, and pepper. Stir well to combine all the ingredients.

6) Cook for an additional 5 minutes, allowing the flavors to meld together and the tofu to warm through.

7) Add the fresh spinach leaves to the skillet and cook until wilted.

8) Remove the skillet from heat and garnish the Savory Vegan Breakfast Hash with fresh chopped parsley.

9) Serve the hash hot and enjoy the delightful combination of flavors and textures.
