• 1 cup cooked quinoa
• 1 can (14 ounces) black beans, drained and rinsed
• 1 tablespoon olive oil
• 1 small onion, diced
• 1 bell pepper, diced
• 1 teaspoon ground cumin
• 1 teaspoon chili powder
• Salt and pepper to taste
• 1 ripe avocado, sliced
• Fresh cilantro, chopped (for garnish)
• Salsa, for topping (optional)


1) In a skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened.

2) Add the cooked quinoa and black beans to the skillet. Season with ground cumin, chili powder, salt, and pepper. Stir well to combine all ingredients and heat through.

3) Remove the skillet from heat and transfer the mixture to serving bowls.

4) Top each bowl with sliced avocado, fresh cilantro, and a dollop of salsa if desired. Serve the Vegan Breakfast Burrito Bowl warm and enjoy!
