Vegan Tofu Scramble

INGREDIENTS
• 1 tablespoon olive oil
• 1/2 onion, diced
• 2 garlic cloves, minced
• 1 red bell pepper, diced
• 1/2 cup cherry tomatoes, halved
• 1 block firm tofu, drained and crumbled
• 2 tablespoons nutritional yeast
• 1/2 teaspoon turmeric
• 1/2 teaspoon cumin
• 1/2 teaspoon paprika
• Salt and pepper to taste
• Fresh parsley or cilantro (for garnish)
HOW TO MAKE IT
1) Heat olive oil in a large skillet over medium heat.
2) Add diced onion and minced garlic to the skillet and sauté until the onion becomes translucent.
3) Add the diced red bell pepper and cherry tomatoes to the skillet and cook for an additional 2-3 minutes until slightly softened.
4) Crumble the firm tofu into the skillet, using your hands or a fork. Mix well with the vegetables.
5) Sprinkle nutritional yeast, turmeric, cumin, paprika, salt, and pepper over the tofu mixture. Stir to evenly coat everything.
6) Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.
7) Remove from heat and garnish with fresh parsley or cilantro.
8) Serve the vegan tofu scramble on toast, in a tortilla wrap, or alongside your favorite breakfast sides.
