Vegan Tofu Scramble

Start your day with a protein-packed vegan tofu scramble that mimics the flavors and textures of scrambled eggs. It takes approximately 25 minutes to prepare, easy to make, and serves two people.

Enjoy a hearty and savory vegan tofu scramble, loaded with vegetables, spices, and plant-based protein, for a satisfying and nutritious breakfast. Tofu is an excellent source of plant-based protein and contains essential amino acids. The addition of vegetables provides a range of vitamins, minerals, and dietary fiber, supporting overall well-being.


• 1 tablespoon olive oil
• 1/2 onion, diced
• 2 garlic cloves, minced
• 1 red bell pepper, diced
• 1/2 cup cherry tomatoes, halved
• 1 block firm tofu, drained and crumbled
• 2 tablespoons nutritional yeast
• 1/2 teaspoon turmeric
• 1/2 teaspoon cumin
• 1/2 teaspoon paprika
• Salt and pepper to taste
• Fresh parsley or cilantro (for garnish)


1) Heat olive oil in a large skillet over medium heat.

2) Add diced onion and minced garlic to the skillet and sauté until the onion becomes translucent.

3) Add the diced red bell pepper and cherry tomatoes to the skillet and cook for an additional 2-3 minutes until slightly softened.

4) Crumble the firm tofu into the skillet, using your hands or a fork. Mix well with the vegetables.

5) Sprinkle nutritional yeast, turmeric, cumin, paprika, salt, and pepper over the tofu mixture. Stir to evenly coat everything.

6) Cook for about 5-7 minutes, stirring occasionally, until the tofu is heated through and slightly golden.

7) Remove from heat and garnish with fresh parsley or cilantro.

8) Serve the vegan tofu scramble on toast, in a tortilla wrap, or alongside your favorite breakfast sides.
