INGREDIENTS

• 1/4 cup chia seeds
• 1 cup plant-based milk (such as almond, coconut, or soy milk)
• 2 tablespoons maple syrup or agave nectar
• 1/2 teaspoon vanilla extract
• 1/2 cup fresh raspberries
• Additional raspberries, for topping

HOW TO MAKE IT

1) In a bowl, whisk together the chia seeds, plant-based milk, maple syrup or agave nectar, and vanilla extract.

2) Let the mixture sit for 5 minutes, then whisk again to prevent clumping.

3) Cover the bowl and refrigerate overnight or for at least 4 hours, allowing the chia seeds to absorb the liquid and thicken the pudding.

4) Before serving, mash the fresh raspberries with a fork to create a compote-like texture.

5) Layer the chia seed pudding and raspberry compote in serving glasses or jars. Top with additional fresh raspberries.

6) Chill for another 30 minutes or enjoy immediately for a delicious and wholesome vegan dessert.
