INGREDIENTS

• 8 ounces rice noodles
• 1 tablespoon sesame oil
• 2 cloves garlic, minced
• 1 red bell pepper, thinly sliced
• 1 carrot, julienned
• 1 cup snap peas, trimmed
• 1/4 cup chopped scallions (green onions)
• 1/4 cup chopped fresh cilantro
• Crushed peanuts, for garnish (optional)

For the peanut sauce:

• 1/4 cup peanut butter
• 2 tablespoons soy sauce or tamari
• 1 tablespoon maple syrup or agave nectar
• 1 tablespoon lime juice
• 1 tablespoon rice vinegar
• 1 teaspoon sriracha or hot sauce (adjust to taste)
• 1/2 teaspoon grated ginger
• Water, as needed to adjust consistency

HOW TO MAKE IT

1) Cook the rice noodles according to package instructions. Drain and set aside.

2) In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.

3) Add sliced red bell pepper, julienned carrot, and snap peas to the skillet. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

4) In a small bowl, whisk together all the ingredients for the peanut sauce until well combined. Adjust the consistency by adding water if needed.

5) Add the cooked rice noodles to the skillet and pour the peanut sauce over them. Toss well to coat the noodles and vegetables evenly with the sauce.

6) Cook for an additional 2 minutes, stirring continuously, until everything is heated through.

7) Remove from heat and garnish with chopped scallions, fresh cilantro, and crushed peanuts (if desired).

8) Serve the Spicy Thai Peanut Noodles hot and enjoy the irresistible combination of flavors and textures.
