• 2 tablespoons olive oil
• 1 medium onion, diced
• 3 cloves of garlic, minced
• 1 can (28 ounces) crushed tomatoes
• 1 can (14 ounces) diced tomatoes
• 1 cup vegetable broth
• 1/4 cup raw cashews, soaked in water for at least 2 hours and drained
• 1 teaspoon dried basil
• 1 teaspoon dried oregano
• 1/2 teaspoon dried thyme
• 1/2 teaspoon smoked paprika
• Salt and pepper to taste
• Fresh basil leaves for garnish (optional)

1) In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until they become fragrant and translucent.

2) Add the crushed tomatoes, diced tomatoes (with their juice), vegetable broth, soaked cashews, dried basil, dried oregano, dried thyme, smoked paprika, salt, and pepper to the pot. Stir well to combine.

3) Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20 minutes to allow the flavors to meld together.

4) After simmering, remove the pot from heat and let the soup cool slightly. Using an immersion blender or regular blender, blend the soup until smooth and creamy. Be cautious when blending hot liquids to prevent accidents.

5) Return the blended soup to the pot and heat it gently over low heat if needed.

6) Taste and adjust the seasonings as desired.

7) Serve the vegan creamy tomato soup hot, garnished with fresh basil leaves if desired. Pair it with crusty bread or a side salad for a complete and satisfying dinner.
