INGREDIENTS

• 1 cup dried green lentils, rinsed
• 1 tablespoon olive oil
• 1 onion, diced
• 3 cloves garlic, minced
• 2 carrots, diced
• 2 celery stalks, diced
• 1 zucchini, diced
• 4 cups vegetable broth
• 1 can diced tomatoes
• 1 teaspoon dried thyme
• 1 bay leaf
• Salt and pepper to taste
• Fresh parsley, chopped (for garnish)

HOW TO MAKE IT

STEP 1
In a large pot, heat the olive oil over medium heat. Add the diced onion and minced garlic. Sauté until the onion becomes translucent.

STEP 2
Add the diced carrots, celery, and zucchini to the pot. Cook for another 5 minutes, stirring occasionally.

STEP 3
Add the rinsed lentils, vegetable broth, diced tomatoes, dried thyme, and bay leaf to the pot. Stir well to combine.

STEP 4
Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let the soup simmer for about 20-25 minutes, or until the lentils and vegetables are tender.

STEP 5
Season the Lentil Vegetable Soup with salt and pepper to taste.

STEP 6
Serve the soup hot, garnished with chopped fresh parsley.
