• 2 cups cooked chickpeas
• 1 cucumber, diced
• 1 bell pepper (any color), diced
• 1 cup cherry tomatoes, halved
• 1/4 red onion, thinly sliced
• 1/4 cup Kalamata olives, pitted and sliced
• 1/4 cup fresh parsley, chopped
• 1/4 cup fresh mint, chopped
• Juice of 1 lemon
• 2 tablespoons extra-virgin olive oil
• 1 clove of garlic, minced
• Salt and pepper to taste


1) In a large bowl, combine the cooked chickpeas, diced cucumber, diced bell pepper, cherry tomatoes, red onion, Kalamata olives, chopped parsley, and chopped mint.

2) In a small bowl, whisk together the lemon juice, extra-virgin olive oil, minced garlic, salt, and pepper to make the dressing.

3) Pour the dressing over the chickpea mixture and toss gently to combine, ensuring all the ingredients are coated.

4) Let the salad sit for at least 15 minutes to allow the flavors to meld together.

5) Serve the refreshing Mediterranean Chickpea Salad as a light and nutritious lunch option or as a side dish to complement any meal.
