• 1 small avocado, thinly sliced
• 1/2 cup purple cabbage, thinly sliced
• Pickled ginger and wasabi, for serving (optional)

For the peanut sauce:

• 1/4 cup creamy peanut butter
• 2 tablespoons soy sauce
• 1 tablespoon maple syrup
• 1 tablespoon rice vinegar
• 1 teaspoon sesame oil
• 1/2 teaspoon grated ginger
• Water (to adjust consistency)


1) Lay a bamboo sushi mat on a clean surface. Place a nori seaweed sheet on the mat.

2) Wet your hands to prevent sticking and spread about 1/2 cup of seasoned sushi rice evenly over the nori, leaving a small border at the top.

3) Arrange a colorful variety of julienned vegetables, avocado slices, and purple cabbage in a horizontal line on the rice.

4) Starting from the bottom, roll the sushi tightly using the bamboo mat, applying gentle pressure. Wet the top border with water to seal the roll.

5) Repeat the process with the remaining nori sheets and fillings.

6) For the peanut sauce, whisk together peanut butter, soy sauce, maple syrup, rice vinegar, sesame oil, and grated ginger in a bowl. Add water gradually to achieve a desired dipping consistency.

7) Slice the sushi rolls into bite-sized pieces using a sharp knife.

8) Serve the Rainbow Veggie Sushi Rolls with the peanut sauce, pickled ginger, and wasabi on the side.
