• 8 oz firm tofu, cubed
• 1 cup broccoli florets
• 1 bell pepper, sliced
• 1 carrot, sliced into matchsticks
• 2 cloves garlic, minced
• 2 tablespoons soy sauce or tamari
• 1 tablespoon sriracha sauce (adjust to taste)
• 1 tablespoon maple syrup or agave nectar
• 2 tablespoons peanut butter
• 1 tablespoon rice vinegar
• 1 tablespoon sesame oil
• 2 tablespoons vegetable oil, for cooking
• 2 green onions, chopped (for garnish)
• Sesame seeds, for garnish (optional)


In a small bowl, whisk together the soy sauce, sriracha sauce, maple syrup, peanut butter, rice vinegar, and sesame oil to make the spicy peanut sauce.

Heat vegetable oil in a large skillet or wok over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant.

Add cubed tofu to the skillet and cook for 5-7 minutes, stirring occasionally, until the tofu is golden brown and slightly crispy.

Add the broccoli florets, sliced bell pepper, and carrot matchsticks to the skillet. Stir-fry for another 5 minutes until the vegetables are tender-crisp.

Pour the spicy peanut sauce over the tofu and vegetables. Stir well to coat everything evenly. Cook for an additional 2-3 minutes until the sauce thickens slightly.

Remove the Spicy Peanut Tofu Stir-Fry from the heat and garnish with chopped green onions and sesame seeds, if desired.
