• 1 cup dried red lentils
• 1 tablespoon coconut oil
• 1 onion, diced
• 3 cloves of garlic, minced
• 1 tablespoon grated ginger
• 1 tablespoon curry powder
• 1 teaspoon ground cumin
• 1 teaspoon ground turmeric
• 1 can (14 ounces) diced tomatoes
• 1 can (14 ounces) coconut milk
• 2 cups vegetable broth
• Salt and pepper to taste
• Fresh cilantro, for garnish
• Cooked rice or naan bread, for serving


1) Rinse the red lentils under cold water and set aside.

2) Heat coconut oil in a large pot over medium heat. Add diced onion and sauté until translucent.

3) Add minced garlic, grated ginger, curry powder, cumin, and turmeric to the pot. Stir well to coat the onion with the spices and cook for another minute.

4) Add the rinsed lentils, diced tomatoes, coconut milk, and vegetable broth to the pot. Season with salt and pepper.

5) Bring the mixture to a boil, then reduce the heat and let it simmer for about 20-25 minutes, or until the lentils are tender and the flavors have melded together.

6) Serve the spicy lentil curry over cooked rice or with naan bread. Garnish with fresh cilantro.
