HOW TO MAKE IT

1) In a medium bowl, whisk together all the ingredients for the peanut sauce until smooth and well combined. Adjust the consistency by adding more coconut milk if desired. Set aside.

2) In a large mixing bowl, combine the cooked rice noodles, julienned carrot, sliced red bell pepper, shredded purple cabbage, chopped scallions, and chopped cilantro.

3) Pour the peanut sauce over the noodle and vegetable mixture. Toss well to ensure all the ingredients are coated in the sauce.

4) Divide the Thai-Inspired Peanut Noodle Bowl into individual serving bowls.
