• 1/4 cup peanuts, crushed (for garnish)

Peanut Dressing:
• 1/4 cup natural peanut butter
• 2 tablespoons soy sauce (or tamari for gluten-free)
• 2 tablespoons lime juice
• 2 tablespoons coconut milk
• 1 tablespoon maple syrup
• 1 teaspoon sriracha (optional, for spice)


In a large bowl, combine the julienned mangoes, red bell pepper, cucumber, and shredded red cabbage.

In a separate small bowl, whisk together the peanut butter, soy sauce, lime juice, coconut milk, maple syrup, and sriracha (if using) to make the Peanut Dressing.
