• 1 can (14 ounces) chickpeas, drained and rinsed
• 1/4 cup vegan mayonnaise
• 1 tablespoon Dijon mustard
• 1 tablespoon lemon juice
• 1/2 teaspoon garlic powder
• Salt and pepper to taste
• 4 whole wheat or gluten-free tortilla wraps
• 1 cup shredded lettuce or spinach
• 1/2 cup sliced cherry tomatoes
• 1/4 cup thinly sliced red onion
• 1/4 cup sliced cucumber
• Fresh cilantro or parsley, for garnish


1) In a medium bowl, mash the chickpeas using a fork or potato masher until they are partially crushed.

2) In a separate small bowl, whisk together the vegan mayonnaise, Dijon mustard, lemon juice, garlic powder, salt, and pepper to make the dressing.

3) Pour the dressing over the mashed chickpeas and mix well to combine.

4) Lay out the tortilla wraps and divide the chickpea mixture evenly among them, spreading it in a line down the center of each wrap.

5) Top the chickpea mixture with shredded lettuce or spinach, sliced cherry tomatoes, red onion, and sliced cucumber.

6) Sprinkle with fresh cilantro or parsley.

7) Roll up the wraps tightly, tucking in the sides as you go.

8) Slice the wraps in half and serve.
