INGREDIENTS

• 1 cup raw cashews, soaked in water for at least 2 hours
• 2 tablespoons nutritional yeast
• 1 tablespoon fresh lemon juice
• 1 tablespoon apple cider vinegar
• 1 clove garlic, minced
• 1 tablespoon fresh chives, finely chopped
• 1 tablespoon fresh dill, finely chopped
• 1 tablespoon fresh parsley, finely chopped
• Salt and pepper to taste
• Water (as needed for consistency)

HOW TO MAKE IT

1) Drain the soaked cashews and rinse them under cool water.

2) In a food processor or high-speed blender, combine the soaked cashews, nutritional yeast, lemon juice, apple cider vinegar, minced garlic, fresh chives, dill, parsley, salt, and pepper.

3) Blend the ingredients until smooth and creamy, scraping down the sides as needed. If the mixture is too thick, add water gradually, 1 tablespoon at a time, until you reach your desired consistency.

4) Taste and adjust the seasonings if needed.

5) Transfer the cream cheese to a container and refrigerate for at least 1 hour to allow the flavors to meld together.

6) Serve the vegan herb cream cheese on bagels, crackers, or as a dip for fresh vegetables. Enjoy!
