• 1 cup cooked green or brown lentils
• 1 cup cherry tomatoes, halved
• 1/2 cup diced cucumber
• 1/4 cup diced red bell pepper
• 1/4 cup diced red onion
• 2 tablespoons chopped fresh parsley
• 2 tablespoons chopped fresh basil
• 2 tablespoons balsamic vinegar
• 1 tablespoon extra-virgin olive oil
• 1 clove of garlic, minced
• Salt and pepper to taste


1) In a large bowl, combine the cooked lentils, cherry tomatoes, diced cucumber, diced red bell pepper, diced red onion, chopped parsley, and chopped basil.

2) In a small bowl, whisk together the balsamic vinegar, extra-virgin olive oil, minced garlic, salt, and pepper to make the dressing.

3) Pour the dressing over the lentil mixture and toss gently to combine, ensuring all the ingredients are coated.

4) Let the salad sit for at least 15 minutes to allow the flavors to meld together.
